3 Bean Salad

Serves/Yields: 10
Prep. Time: 5 min prep/ sit overnight
 
 

Ingredients

1 can(15/16 oz)cut green beans

1 can(15/16 oz)cut yellow/wax beans

1 can Edens Black soy beans

1 cup sliced sweet onion

3/4 cup cider vinegar
1/3 cup vegetable or canola oil

15 splenda packets

1 teaspoon salt

1 teaspoon pepper
 

Directions

Rinse beans; drain. Combine beans and sliced onion. Whisk together remaining ingredients; pour over bean mixture. Toss three bean salad well and chill overnight. Store three bean salad in refrigerator

 

Almond Green Beans

Serves/Yields: 3-4
Prep. Time: 20 minutes

Ingredients

1 package frozen green beans, french cut

1 to 2 packages blanched, slivered almonds (I use 2 packages, or 4 oz.)

3 to 4 tbs. olive oil

2 tbs. butter or margarine

Lawry’s seasoning salt to taste

Pepper to taste

Garlic powder to taste (optional)

Onion powder to taste (optional)

Grated Parmesan or Romano cheese (optional
 

Directions

Preheat oven to 350 degrees.

On a foiled baking pan, mix almonds, 1 to 2 tbs. olive oil, and sprinkle with Lawry's seasoning salt. Mix well. Spread mixture into a thin layer and bake for 10 minutes, until almonds are golden brown. (Watch to make sure they don’t burn)

Cook and drain green beans. In a casserole dish, add cooked green beans, almond mixture, garlic powder, onion powder and pepper. Lightly coat with olive oil (if needed) and add butter. Mix well.

Cover and bake for about 20 minutes. Sprinkle grated cheese over top before serving, if desired.


Bacon and Cream topped Tomatoes

Ingredients

4 slices bacon
1/2 cup sour cream
4 med tomatoes
salt and pepper
In a large skillet fry
 

Directions

In a large skillet fry bacon until crisp: drain on paper towels. Reserve drippings in pan. In a small bowl crumble bacon; blend in sour cream. Cut ends of tomatoes and cut tomatoes in half. Saute cut side of tomatoes in bacon drippings. Turn over. Sprinkle with salt and pepper. Top with sour cream mixture. Cover and cook 2 mintues.
